1 cup SR flour
1 cup plain flour
1 cup sugar
1/3 cup cocoa
1 tsp bi carb soda
1/2 tsp salt
In a separate jug or bowl stir together:
1 tsp vanilla essence
1 tsp white wine vinegar
1/2 cup Cooladerra Farm Extra Virgin Olive Oil
1 cup water
Add the wet ingredients to the dry ingredients and mix well.
Pour into a greased and papered tin and bake in a preheated 180oC oven for 40-45 minutes. Turn out of tin when nearly cold.
Cake can be just dusted with icing sugar or topped with chocolate icing and strawberries for a special treat.
